Landscapes – an edible homage to the unique diversity of the myriad landscapes that make up our homeland.

We want to create the experience of tasting the land and bringing the visceral memory of these places we know, to the table. Expect to be eating dinner in a very different manner than you are accustomed to. Expect to taste many new flavors that you have seen around you in the wild. Although some native plants and animals will be featured in this dinner, we are more so focussed on the non-native and invasive species of our as this dinner will be an act of education and preservation as well as culinary exploration. If we are to be interacting with our land, we must also be tending and caring for it. The food you will be eating is hand harvested from Marin County, and processed by hand, down to the acorn flour for the crepes, and the sea salt to garnish your fish crudo. Each course will focus on ingredients found in four distinct regions:

  • Seaside
  • Valleys / Chaparral
  • Mountains

Please know that due to the nature of foraging, the menu is subjected to change, depending on what fish swim our way, what mushrooms the rain brings, and how quickly the first greens of the year sprout up! To give you an idea of what you’ll find on the landscape boards:

Seaside
Salt cod & celeriac brandade
Seaweed sourdough
Purple uni & sweet potato dip
Marinated mussels, orange aguachile, sea fennel
Albacore onigiri, oyster mushrooms, sea lettuce
Seaweed salad, wild garlic, lemon

Valleys
Stinging nettle gnocchi, wild mushrooms, mugwort, brown butter
Wild greens salad, pink peppercorn
Marinated & grilled wild onions
Little wing farm quail rillette, wild fennel, sage
Acorn & bay laurel nut crackers

Mountains
Candycap & acorn shortbread
Bay leaf posset, huckleberry compote
Candied willow leaves

Wine: pairings will include 5 wines, carefully selected to highlight the taste of our local terroir.
